Calgary's Xing Fu Tang brings the wok-stirred brown sugar show to Centre Street. The pearls don't hit quite the same stratospheric chew as the Vancouver flagship, but they're still head and shoulders above standard-issue boba. The theatre of watching them stir-fry your sugar is worth the price of admission.
The Calgary outpost of the Taiwanese brown sugar juggernaut. The wok show is slightly less theatrical than Vancouver, but the core experience โ warm, chewy pearls tumbling in caramelized brown sugar โ translates just fine. Centre Street's Chinatown stretch keeps getting better.
